Cooking is a creative expression of love for most families. When I cook, I want really good recipes that my family will enjoy, and won't stress me out at supper time. My goal is for time spent in the kitchen to be memorable teaching moments with my kiddos... full of love, laughter, and great conversation! At the same time, the kids are learning to prepare meals and learn a little math in the best school they could attend... our kitchen! Let's get cookin' and share some recipes! :)

Sweet Potato Casserole



This is a recipe my friend Janelle shared years ago.  It is crunchy on top, warm, sweet & yummy inside, and VERY healthy.  NOT!!  ;)

Okay, you will need to pre-bake 2 big sweet potatoes.  (Bake at 400 for about an hour or so, until soft)

Then...
1/2 cup sugar
1/2 cup milk
1 beaten egg
3 Tablespoons softened butter
1 teaspoon vanilla


Scrape the potato pulp out of skins once it's cool enough to handle. Add remaining ingredients & mix well. Place into an 8X8 casserole dish.

TOPPING: 
1/2 cup brown sugar
1/3 cup flour
2 Tablespoons softened butter
1/2 cup chopped pecans. 

Combine with fork or pastry cutter until well blended and sprinkle on top of potato mixture.
Bake at 350 degrees for 25 minutes. 
Super Yummy!!
