Cooking is a creative expression of love for most families. When I cook, I want really good recipes that my family will enjoy, and won't stress me out at supper time. My goal is for time spent in the kitchen to be memorable teaching moments with my kiddos... full of love, laughter, and great conversation! At the same time, the kids are learning to prepare meals and learn a little math in the best school they could attend... our kitchen! Let's get cookin' and share some recipes! :)

Chicken Pot Pie

 
 
   
 
Chicken Pot Pie
Make Pie Crust ahead.
 
 
1 pound of chicken (I cooked a whole chicken the day before in crockpot, used it and the broth)
1 cup frozen veggies

 
Preheat to 400
Sautee onions, garlic, and celery in butter.  Stir in flour, and pepper.  Add the can of soup.  Simmer over medium-low heat until thick. Remove from heat and set aside.
 
Place the cooked chicken in bottom pie crust. Pour hot liquid mixture over chicken and add veggies. Cover with lattice pie crust.
 
Bake in the preheated oven for about 30 minutes, or until pastry is golden brown and filling is bubbly. (might wanna cover pie crust loosely with aluminum foil the first 20 minutes or so)
So easy. :)

Simple Mexican Casserole w/Chips

A kid named Jake attacked this before I could get a good pic!! ;)
 


1 lb. ground beef browned with garlic, chili pepper, black pepper, onion powder, garlic powder, seasoning salt.  When cooked, add:
1 can cream mushroom soup
1 can diced tomatoes w/chili's
1 can refried beans, or black beans

Line the baking pan with Corn chips and add the meat mixture.
Add 6 slices of sandwich Cheese, then all the grated cheddar you can stand!
I also added canned Sweet Jalapenos. 

Cook on 350 for about 15-20 minutes.

Top with:
Fresh cilantro,
Pace Chunky Salsa
Sour cream
...and all your other favorite toppings!
