Cooking is a creative expression of love for most families. When I cook, I want really good recipes that my family will enjoy, and won't stress me out at supper time. My goal is for time spent in the kitchen to be memorable teaching moments with my kiddos... full of love, laughter, and great conversation! At the same time, the kids are learning to prepare meals and learn a little math in the best school they could attend... our kitchen! Let's get cookin' and share some recipes! :)

EZ Creamy Tomato Soup


I fell in love with Mimi's Tomato Soup and thought with some research, I could come up with something similar!  This is how I did it... so good on a cold day like today!  If ya make it like I did, you will need:

4 C. crushed tomatoes
4 chicken bouillion cubes
4 C. boiling water
2 Tb. butter
2 garlic cloves
1/2 C. chopped onion
1/4 C. sugar
Salt & Pepper
1 C. heavy whipping cream
2 Tb. dry basil

*Sour cream, Cilantro, Cheddar Cheese if desired!

Pour 4 cups of boiling water over 4 bouillion cubes and set aside.
Sautee garlic and onion in butter about 5-10 minutes.
Add crushed tomatoes and get it real hot.
Add tomato and onion mixture to the chicken broth, add sugar, some salt & pepper and bring to boil.
Remove from heat, add cup heavy whipping cream & dry basil.  (I prefer fresh basil if I have it! :)

*Add a little cilantro, a dollup of sour cream, some grated cheddar cheese and had this yummo soup with a grilled cheese sandwich!  Awesome!
