Cooking is a creative expression of love for most families. When I cook, I want really good recipes that my family will enjoy, and won't stress me out at supper time. My goal is for time spent in the kitchen to be memorable teaching moments with my kiddos... full of love, laughter, and great conversation! At the same time, the kids are learning to prepare meals and learn a little math in the best school they could attend... our kitchen! Let's get cookin' and share some recipes! :)

Quick Easy Potatoes


My Mom is a great cook. She makes the simplest dishes taste so wonderful without using hardly any seasoning, other than salt 'n pepper. Try her easy taters... So rich and flavorful, so little time and effort, you'll be so glad you did! I use red potatoes...

Preheat: 375
About 6 or 8 red potatoes sliced in 1/4 in. circles, I like to leave the pealing on.
1/2 package (or 1/2 pound) Bacon (I use Turkey Bacon, just add some EVOO for more juicy-ness!)
Onion, Salt and Pepper
Shredded Cheddar Cheese

Cook about 45 minutes, add the cheese when done!
Mmm Mmm! :)
